What is Chinese Green Tea?

According to the Classic of Tea,tea application initiated from fresh tea-leaf chewing and then boiing for tea liquid. Later, people baked fresh leaves on fire and then boiled them, marking the eariest rough processing of green tea .

Modern production processes of green tea: plucking fresh leaves  fixation （deactivating the enzyme in fresh leaves at high temperature,restricting the polyphenol enzyme in fresh leaves,promoting oxidation and preventing reddening） twisting and shaping drying. This is the rough processing of green tea also called raw tea.
