Modern production processes of green tea: plucking fresh leaves fixation (deactivating the enzyme in fresh leaves at high temperature,restricting the polyphenol enzyme in fresh leaves,promoting oxidation and preventing reddening) twisting and shaping drying. This is the rough processing of green tea also called raw tea.
